The Andrews family has operated Wholly Cow for 18 years. They work from their brick and mortar butchery in the heart of Cambridge. Luke, Tom, and Carrie finish all their beef and lamb on a 350-hectare farm just outside Cambridge. The farm also operates using regenerative agriculture practices. This means lightly running stock and giving paddocks time to recover.
Visitors to the butchery can find whole carcass cuts. These include liver, heart, and kidneys. You will also see traditional sausages and deboned meat. Carrie renders tallow into herbal-infused balms. She processes sheepskins into leather goods under the brand Flock.
Reducing transport reduces stress on the stock. The team believes this makes for better tasting meats.
